ingredients

  • 1 1/2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 clove garlic
  • 1 tablespoons chopped parsley
  • 1 large can tomatoes
  • 1 6oz. can tomato paste
  • 2 bay leaves
  • 2 cups milk
  • 1 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 teaspoon each oregano and basil
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1 cup shredded Parmesan cheese
  • 2 egg yolks
  • 8 ounces lasagna noodles
  • 1 cup Ricotta cheese

    In large frying pan, bronw the beef in oil until crumbly. Add the onion, garlic, and parsley, and cook for 5 minutes. Add tomatoes (breaking them up), tomato paste, bay leaves, 1 teaspoon salt, pepper, oregano, and basil. Cover and simmer for 45 minutes, stirring occasionally.

    Melt butter in saucepan, stir in the flour, and cook until bubbly. Remove from heat and gradually add the milk. Return to heat and cook, stirring until thickened. Stir in the Parmesan and ricotta, egg yolks, and remaining salt, and cook for 2 minutes.

    Cook noodles, arrange in 9x13 pan, add the meat sauce, the cheese sauce, and then repeat. Bake in 325° oven for 25 minutes.
