ingredients

  • 2 half chicken breasts cooked and shredded
  • 2 Tb Crunchy P. B.
  • 2 Tb Soy Sauce
  • 4 Tb rice vinegar
  • 1 tsp sugar
  • 1 Tb sesame oil
  • 2 Tb vegetable oil
  • 1 Tb chopped ginger
  • 1 Tb chopped garlic
  • 2 green onions, chopped
  • 1 Tb rice wine
  • 1/2 cup chicken stock
  • 6 oz Chinese noodles
  • (cooked until tender)
  • 1 tsp sesame oil
  • 1 cucumber, peeled and shredded
  • 1 cup green grapes
  • 1/2 cup pineapple chunks
  • soy sauce a

directions

    Combine peanut butter, chicken stock, sesame oil, rice wine, garlic, ginger, soy sauce and rice vinegar.

    Reserve

    Combine all other ingredients in a medium bowl.

    Add reserved peanut butter sauce. Mix well.

  • 5

    Chill for minimum one hour.
