Caramelized Onion Toasts
Serve with Italian cured meats such as prosciutto and salami and olives. Really good with champagne.
ingredients
- 8 TBSP butter, divided
- 2 med. onions, sliced
- anchovy paste (to taste)
- 2 tsp. fresh thyme, chopped
- kosher salt & pepper
- 1 baguette
- olive oil
- fresh parmesan

Heat 4 TBSP butter. Add onions, anchovy, thyme, salt & pepper. Cook until the onions are sweet and golden brown, about 20 minutes or more. The key to caramelization is LOW and SLOW.

Shave off the rounded top and bottom of the baguette so it lies flat. Cut the baguette in half lengthwise to make 2 long slides of bread. Brush both sides with melted remaining 4 TBSP butter.

Put the bread on a baking sheet and spread with the onions. Drizzle with olive oil. Bake in a 400 degree oven until bread is crispy, about 15 minutes. Top with parmesan (a microplane grater works great here). Cut into pieces and serve with meats and olives.
