Spring Rolls and Thai Peanut sauce
Thai Peanut Sauce is for dipping, but also great for stir frys.
ingredients
- Ingredients for peanut sauce:
- 1 cup fresh-tasting dry roasted peanuts, unsalted
- 1/8-1/4 cup water depending on desired consistancy
- 2 cloves garlic, minced
- 1/2 tsp. dark soy sauce
- 2 tsp. sesame oil
- 2 Tbsp. brown sugar (I add 1 Tbsp more b/c I like it a little sweeter)
- 2 Tbsp fish sauce
- 1/2 Tbsp. lime juice
- 1/2 tsp. ground red pepper or cayenne pepper (can add more if you would like it more spicy)
- 1/3-1/2 cup coconut milk
- Ingredients for Spring rolls:
- Rice wrappers (clear round sheets made of rice specifically for rolling-can be found at any Asian store or I get mine from a local Natural Food Store, some supermarkets may carry them in the Asian section)
- firm tofu, sliced long-ways or cooked, chicken in strips
- fresh cucumbers, sliced long-ways
- fresh cilantro with stems
- fresh bean sprouts
- fresh carrots, sliced long-ways
- fresh sliced cabbage
- (any fresh vegetable is acceptable or you can omit anything above or substitute with something else!)

Preparation of peanut sauce:

1. Place all ingredients in blender or food processor. Blend until sauce is smooth and not grainy.

2. Taste test: if not salty enough add more fish sauce or soy sauce, if too salty, add a squeeze of lime juice or some more coconut milk, add more sugar if not sweet enough.

Preparation of Spring rolls:

1. Cut up all veggies and tofu/chicken and separate into piles. Place a dry dish towel next to the veggies.

2. Place a medium sized frying pan on the stove with about 3/4-1 cup of water in it. Bring the water to almost a boil, then remove to cold burner. Let the water cool til you can touch it w/o burning yourself. Take a Rice Wrap and submurge it into the water for 10-15 seconds until it is flimsy but not tearing.

3. Take it out of the water and place on dish towel and put veggies, etc. onto one side closest to you. Then proceed to roll the wrap over the veggies so that the wrap is in half. Then pull up the sides and finish rolling to the end of the wrap.

Al and I have experienced great peace in our marriage because we do our finances together. We have a budget together, pay bills together, balance the check book together and talk about savings and investing together. We have a plan and goals and it certainly helps. I would venture to say that over half of our decisions deal with some sort of money giving or money spending/saving, etc. Whether grocery shopping, pumping gas for trips/work or buying cars or a home-it deals with money. The use or misuse of money is a great cause, in fact the number one cause of marriage fights in the US today. Much of the wisdom we have learned about money comes straight out of Proverbs in the Bible.
