Shrimp and Pasta Toss
ingredients
- 1 C sliced mushrooms
- 1/2 C chopped onion
- 2 cloves garlic, finely chopped
- 1 Teaspoon basil leaves
- 2 Tablespoon olive or veggie oil
- 2 Tablespoon Lemon Juice
- 2 Teaspoons Instant Chicken bouillon
- 1/2 C water
- 1 LB medium raw shrimp, peeled and deveined
- 1 C chopped green pepper
- 1 large tomato seeded and chopped
- 1/2 LB pasta, cooked
- 2 Tablespoons parmesan cheese

In a large skillet, cook mushrooms, onion, garlic, and basil in oil until tender. Add water, lemon juice and bouillon; bring to a boil. Reduce heat, add shrimp and pepper. Simmer uncovered 5 to 8 minutes or unitl shrimp are pink. Stir in tomato. In a large bowl toss shrimp mixture with hot noodles and cheese. Serve with additional cheese if desired.
