Tex-Mex Chicken Salad
How wonderful is chicken salad? This recipe is good for a Saturday picnic or a Sunday brunch.
ingredients
- 1 1/4 lbs chicken (cooked & chopped)
- 1/2 cup mayo
- 1/2 cup sour cream
- 1/4 t chili powder
- 1 small green pepper
- 2-4 green onions
- 1 can corn (drained)
- 1 cup black beans (drained & rinsed)
directions
Combine mayo, sour cream and chili powder. Add chicken, peppers, onions and corn; mix well. Gently fold in beans until combined. Cover and chill for 1 hour.
notes
Trim the recipe down by using fat free mayo and sour cream. 1 cup will equal 4 points.
