Toasted Almond Fingers

These cookies have become part of our Christmas tradition. The nut and chocolate combination can’t be beat. These taste especially good with small bits of toasted almonds rather than finely ground almonds.

ingredients

  • 1 cup butter, softened
  • 3/4 cup sifted powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/4 teaspoon salt
  • 2 cups finely chopped toasted almonds
  • 6 oz semisweet chocolate chips
  • 1 tablespoon shortening

directions

Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add milk and vanilla, beating well. Add flour and salt, mixing until well blended. Stir in almonds. Chill dough thoroughly. Shape dough into thin logs, using 1 teaspoon of dough for each; place 2 inches apart on ungreased cookie sheets. Bake at 325 degrees for 13 to 15 minutes or until lightly browned. Cool on wire racks. Melt chocolate and shortening in microwave (stop microwave in middle to stir). Dip both ends of each cookie in chocolate, letting excess drop off; leave cookies on wax paper until chocolate is set.
