Spaghetti with quick meat sauce
ingredients
- 12 ounces spaghetti
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, chopped
- 3/4 pound ground beef
- kosher salt and pepper
- 1 28-ounce can crushed tomatoes
- 1/2 cup fresh flat-leaf parsley, chopped
- 1/4 cup grated parmesan cheese

Cook the pasta according to the package directions. Meanwhile, heat the oil in a large saucepan over medium heat. Add the onion, carrot, and garlic and cook, stirring occasionally, until soft, 8 to 10 minutes.

Increase heat to medium-high. Add the beef, 3/4 tsp salt, and 1/2 tsp pepper and cook, breaking up the meat with a spoon, until no longer pink, 4 to 5 minutes. Add the tomatoes and simmer, stirring occasionally, until the sauce thickens, about 5 minutes. Stir in parsley.

Serve the pasta with the sauce and sprinkle with parmesan cheese.
