Apple, Chicken and Endive Salad
We believe this one came from Mrs. Williams on your girls weekend at the cottage... either way its delicious!
ingredients
- Salad:
- 4 Slices bacon, cooked crisp and crumbled
- 1 large granny smith apple, diced
- 1 large braeburn apple, diced
- 1 roasted chicken, meat removed and chopped
- 1 cup dried cranberries
- 1/2 cup pistachios, toasted and chopped
- 4 cups thinly sliced endive
- 4 cups thinly sliced spinach
- 6 oz. goat cheese, crumbled
- Dressing:
- 1/3 cup apple cider vinegar
- 2 Tbsp. minced shallots
- 2 Tbsp. pure maple syrup
- 2 tsp. dijon mustard
- 1- 1 1/2 tsp fresh thyme, chopped
- 1/3 cup walnut oil
- 1/3 cup olive oil
- 1 tsp salt
- 1/2 tsp ground black pepper

Combine all salad ingredients into a large salad bowl and toss to combine.

For the dressing, combine ingredients into a blender and blend until everything is incorporated. Dressing can be refrigerated for up to 3 days.

Toss salad with 1/2 cup dressing before serving.
