A Taste of Bern wherever you are!

ingredients

  • 1 lb baking potatoes
  • 1 Large Onion
  • 2 Tbsp Vegetable Oil
  • 4 tbsp butter
  • 5-6 strips lean bacon
  • Salt & Pepper to taste

    Cook potatoes in boiling water for 10-15 minutes or until tender.

    Remove from heat and drain all the water. Shock the potatoes by leaving them under cold running water for about a minute.

    Peel the potatoes. Grate potatoes on a coarse grater into a bowl.

    Finely dice the onion.

  • 5

    Briefly cook bacon. Do not let it get crispy.

    Dice the bacon into small pieces.

  • 7

    Combine the potatoes, bacon and onion and toss to mix well. Add salt & pepper to taste.

    Melt the butter together with the oil in a large skillet.

  • 9

    Add potato mixture to the skillet and with a spatula press the mixture into a large pancake. Cook over medium high heat until bottom is browned. Gently slide the “pancake” out of the skillet onto a large plate. Invert the pan over the plate and cook the other side until browned.

    Serve warm. You can also add cheese (preferably Gruyere) or other vegetables. A typical Bernese preparation: top the Roesti with a fried egg.
