Beef Tips with Gorgonzolla over Angel Hair Pasta

ingredients
- 1.5 pounds beef tenderloin fillet
- Salt and black peppercorn
- 1/4 cup balsalmic vinegar
- 2 tablespoons chopped garlic
- 1/4 lb. Gorgonzola cheese, crumbled
- 2 tablespoons olive oil
- 1 cup red wine
- 1/2 cup heavy cream

Cut filet of beef into thin 1 inch slices sprinkle with salt and peppercorns and marinade with balsalmic vinegar.

Saute on medium heat with olive oil, add wine after 5 minutes. Cook until medium rare-medium. Low heat, add cream and simmer. Add cheese and stir until melted. Serve over angel hair pasta.

I just love the taste of gorgonzola and beef and then when you add the wine and cream it's to die for!
