Upside Down Pineapple Cake
ingredients
- Batter:
- 1 cup sugar
- 1/2 cup butter
- 1/2 tsp baking soda
- 1/2 cup BUTTERMILK
- 2 cups flour
- 2 eggs
- 1 tsp pure vanilla
- Brown Sugar
- Pineapple Rings
- Cherries

Put 1/2 stick butter and 1/2 cup dark brown sugar into a cake pan. Place into heating oven to melt. Will only take a few minutes. Remove from oven and stir together.

Arrange pineapple slices on bottom and side of cake pan on to of sugar/butter mixture. Add cherries if you like for more color.

Beat sugar with the butter.

Stir baking soda into buttermilk.

Add to sugar mixture.

Add eggs and mix well.

Add flour and vanilla.

Mix and pour into pan over pineapple/cherries. [batter is a bit thick - that’s okay]

Pour batter over cake and bake in 350° oven or until DONE when toothpick comes out dry.
