Cheesy Broccoli Soup

ingredients

  • 6 c. water
  • 3 chicken bouillon cubes
  • 1 10 oz. frozen baby broccoli spears, thawed and cut up
  • 1 med. onion, chopped
  • 1/4 c. butter
  • 7 Tb. flour
  • 2 3/4 c. milk
  • 1 lb. american cheese, cubed

directions

In large saucepan, bring water and bouillon to a boil. Add broccoli. Reduce heat, simmer for 4 minutes. In another large pan saute onion in butter until tender. Whisk in flour until blended. Add the milk and cheese. Cook over medium low heat until cheese is melted. Stir frequently. Stir in broccoli and broth. Cook over low heat. If needs thickened add 1/3 c. milk mixed with 3 Tb. flour.
