Tomato Basil Cream Pasta
A creamy sauce with a surprising zing spices up your typical spaghetti dish.
ingredients
- 2 cup chopped tomatoes (1 1/2 cup blended)
- 1/2 cup cashews
- 1 tbsp. tomato paste
- 1/4 cup water
- 2 tbsp. olive oil
- 2-4 cloves garlic, minced
- 6 oz. spaghetti
- 1 tsp. salt
- 2-3 tbsp. wine or water
- 1-2 tbsp. coarsely chopped, black pepper
- 1 large handful of fresh basil leaves, chopped

Blend tomatoes, cashews, paste, water until smooth.

Add olive oil to pan over medium-high heat. Add garlic, and saute until golden. Pour sauce from blender to pan and simmer. Add salt. Let cook 4-5 minutes, stirring occasionally.

Add water/wine to thin out sauce if desired.

Let summer until pasta is finished cooking. Drain pasta, then add to sauce with pepper and basil leaves.
