Tomato Basil Cream Pasta

A creamy sauce with a surprising zing spices up your typical spaghetti dish.

ingredients

  • 2 cup chopped tomatoes (1 1/2 cup blended)
  • 1/2 cup cashews
  • 1 tbsp. tomato paste
  • 1/4 cup water
  • 2 tbsp. olive oil
  • 2-4 cloves garlic, minced
  • 6 oz. spaghetti
  • 1 tsp. salt
  • 2-3 tbsp. wine or water
  • 1-2 tbsp. coarsely chopped, black pepper
  • 1 large handful of fresh basil leaves, chopped

directions

    Blend tomatoes, cashews, paste, water until smooth.

    Add olive oil to pan over medium-high heat. Add garlic, and saute until golden. Pour sauce from blender to pan and simmer. Add salt. Let cook 4-5 minutes, stirring occasionally.

    Add water/wine to thin out sauce if desired.

    Let summer until pasta is finished cooking. Drain pasta, then add to sauce with pepper and basil leaves.
