Sunday Brunch Casserole
ingredients
- 3/4-1 lb. bulk sausage
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 12 eggs
- 1 c. milk
- 16 oz. frozen has browns, thawed
- 1 c. shredded cheddar cheese
- 1/2 t. salt
- 1/2 t. pepper
- 1/4-1/2 t. garlic granules
directions
In a skillet, cook sausage till nearly browned. Add onions and green peppers and saute until tender. Remove with a slotted spoon. Beat eggs and milk in a large bowl. Stir in hash browns, cheese, seasonings and sausage mixture. Transfer to a greased baking dish. Bake, uncovered at 350° for 35-45 minutes, or until a knife inserted near the center comes out clean.

Served with overnight coffee cake and fruit makes for a wonderful brunch!
