ingredients

Cake:
  • 2 1/4 cup flour
  • 1 cup sugar
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • 1 cup raw, whole cranberries
  • 1 cup chopped walnuts
  • 1 cup diced dates
  • grated rind 2 oranges
  • 2 eggs beaten
  • 3/4 cup salad oil
For Glaze:
  • 1 cup orange juice
  • 1 cup sugar.

    Grease a 10" tube pan. Preheat oven to 350°. Mix together all dry ingredients.

    Stir in cranberries, nuts, dates and orange rind. Beat eggs; add buttermilk and salad oil. Stir into flour mixture. Pour into pan and bake for 40-60 minutes until lightly browned.

    Cool in pan until lukewarm. Remove cake from pan to cake rack placed over wide dish.

    Combine 1 cup orange juice with 1 cup sugar. Pour over cake. Cover and refrigerate 24 hours. Serve plain or with whipped cream.
