Pasta Salad

ingredients

  • 8 oz. bow tie pasta, cooked
  • 1 med. green bell pepper, finely chopped
  • 1 med. red bell pepper, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1 celery rib, thinly sliced
  • 30 kalamata olives, pitted
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup Pasta Salad Dressing
Pasta Salad Dressing
  • 1/4 cup balsamic vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup olive oil
  • 1 Tbs. chopped fresh parsley
  • 1 green onion, thinly sliced
  • 1 garlic clove, minced
  • 1 tsp. lemon juice
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried tarragon
  • 1/2 tsp. salt

directions

Whisk dressing ingredients together in a small bowl. Toss all salad ingredients together. Add additional dressing to salad if desired. Serve at room temperature or chilled. Garnish with fresh basil.

notes

This is a great salad to use for parties. You can make everything ahead of time and toss is all together when you are ready to serve. You can also add 2 cups shredded or chopped cooked chicken for a complete meal.
