Holiday Salad
A salad rich in color and taste. A true family favorite that will keep your family around the table longer, dishing up seconds!
ingredients
- Three Endive or Romaine lettuce
- One Cup Corn
- One Avocado
- Four Ounces Irish Cheddar Cheese
- One Half Cup Pomegranate Seeds or Dried Cranberries
- One Large and Tart Granny Smith Apple
- Two tablespoons Extra Light Olive Oil
- Juice of Two Fresh Lemons
- One teaspoon Cinnamon
- Salt and Pepper to taste

Start by chopping the endive or lettuce. Endive can sometimes be a little bitter, so if you are not one on bitter tasting ingredients, substituting with romaine lettuce is the perfect solution. Once you have chopped the greens to an appropriate eating size move on the to cheese. Cube into quarter inch pieces. Toss in the corn and berries in with the greens and cheese.

To keep the optimal color of the avocado and apple, it is important to now start the dressing for the salad in order to coat them with the dressing before adding to the rest of the salad. So, in a small bowl wisk the olive oil, lemon juice and seasonings. Set aside, but not too far away!

Chop the avocado and apple into quarter inch pieces like the cheese. Add avocado and apple pieces to the dressing and coat. Once they have soaked, toss them into the green mix until all ingredients have been sufficiently coated with the dressing!
