Peanut Noodles and Turkey Skewers
ingredients
- Peanut Sauce
- 1/2 cup smooth peanut butter
- 2 tablespoons lemon juice
- 2 tablespoons reduced-sodium soy sauce
- 2 teaspoons chopped fresh ginger
- 2 cloves garlic, chopped
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon red pepper flakes
- Turkey and noodles
- 8 ounces wide 10 mein noodles
- 2 carrots, shredded
- 3 scallions, sliced
- 1 pound thin sliced turkey breast
- Lemon slices, to garnish, optional

1. Heat broiler and spray a broiler pan

with nonstick cooking spray. Bring a large pot of water to a boil.

2. Peanut Sauce: In a small bowl, whisk

together the peanut butter, 1/2 cup warm water, lemon juice, soy sauce, ginger,garlic, sesame oil, sugar and red pepper flakes. Set aside.

3. Noodles & turkey: Cook noodles

following package directions. Rinse under cold water. Toss with 1cup of the peanut sauce, the shredded carrot and scallion.

4. Cut each turkey cutlet crossways into 6 pieces. Thread onto 8 metal skewers.

Brush liberally with remaining peanut

sauce. Broil for 2 minutes. Turn and broil for an additional 2 minutes. Remove.

5. Serve immediately with noodles.

Garnish with lemon slices, if desired.
