Our Best Bran Muffins
ingredients
- 1 1/4 cup all purpose flour
- 3 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 2 1/2 cups of 40% bran flakes
- 1 1/4 cup milk
- 1 egg
- 1/3 cup shortening or vegetable oil
directions
Stir together flour, baking powder, salt and sugar. Set aside. Measure bran flakes and milk into bowl. Stir and set aside. Let stand 1 or 2 minutes. Add egg and shortening. Beat well; add dry ingredients to cereal, mixing only until everything is combined. Pour into 2 greased 2 1/2 inch muffin cups. Bake in 400 degrees oven, about 25 minutes or until golden brown.
