Lentil Soup
A secret family recipe, not from our family!
ingredients
- 3 Tbs olive oil
- 1 large onion, finely chopped
- 2 large cloves garlic, chopped
- 1 carrot, diced
- 3/4 cup dried apricots, chopped
- 6 cups chicken stock
- 1 1/2 cups red lentils, rinsed
- 3 tomatoes, peeled, seeded and chopped
- 1 Tbs molasses
- 1/2 tsp cumin
- 1/2 tsp dried thyme
- 2 Tbs lemon juice
- salt and pepper
- parsley

Saute the first 5 ingredients. Then add the chicken stock and lentils. Bring to a boil and simmer until lentils are tender. Add tomatoes. Puree until smooth.

Stir in the remaining 5 ingredients and sprinkle with the parsley.
