a crisp, hearty, delicious salad that is sure to bring a smile to your face.

ingredients

  • for the vinaigrette:
  • 1/4 cup blood orange juice
  • 1 tablespoon of fresh lemon juice
  • 1 1/2 tablespoons raspberry vinegar
  • 3 tablespoons of extra virgin olive oil
  • salt and pepper
  • for the salad:
  • 1 3 pound cantaloupe
  • 1 thinly sliced red onion
  • 2 cups arugala
  • 1 cup toasted and choppecd walnuts

directions

First assemble the cantaloupe,red onion,and arugula large bowl.Then in a small skillet toast the walnuts until browned.Add the nuts to the salad. Finally in a small bowl whisk together the ingredients for the vinaigrette and pour over the salad. Season with salt and pepper to taste.

This salad is perfect for any occasion and goes great as a side for a meal including meat.
