Goat Cheese Tort
ingredients
- 8oz. Créme cheese
- 8oz. Goat cheese
- 3 Sticks soft butter
- 1 Cup pesto
- 1 Cup sun-dried tomatoes drained and chopped
- 4 1/2 Cups fresh basil
- 1 1/2 Cup extra virgin olive oil
- 1/2 Cup pine nuts
- 5 Cloves garlic
- 1 Tsp. salt
- 4oz. (1 Cup) freshly grated Parmesan Cheese
directions
Beat créme cheese, goat cheese, and butter until fluffy. Place 1/3 cheese mixture into the bottom of a spring-form pan. Place 1/2 pesto over the cheese mixture. Repeat this one time. Cover with last portion of cheese mixture. Top with tomatoes. Cover and refrigerate 1 hour
Home-made Pesto
Puree all (except cheese) until smooth. Stir in Parmesan. Refrigerate or freeze
