Whole Wheat Blueberry Muffins
Evan LOVES these muffins.
ingredients
- 1/4 c. packed brown sugar
- 1/2 tsp. ground cinnamon
- 3/4 c. fat-free milk
- 1/4 c. canola oil
- 1/4 c. honey
- 2 eggs
- 1 c. all-purpose flour
- 1 c. whole wheat flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. frozen blueberries

Heat oven to 400 degrees F. Spray 12 regular-size muffin cups with cooking spray or place paper baking cup in each muffin cup. Stir together brown sugar and cinnamon; set aside.

In a large bowl, beat milk, oil, honey, and eggs with spoon. Stir in flours, baking powder and salt just until flours are moistened (batter will be lumpy). Gently stir in blueberries.

Divide batter evenly among muffin cups (cups will be full). Sprinkle with brown sugar mixture. Bake about 20 minutes or until golden brown. Immediately remove from pan.
