Avocado and Grapefruit Salad with Pine Nut Dressing

ingredients
- Dressing
- 3 T gresh grapefruit juice
- 1/4 cup pine nuts, toasted lightly
- 2 t white-wine vinegar
- 1/3 cup olive oil, or to taste
- Salad
- 3 ripe avocados
- 6 cups loosely packed spinach leaves
- 3 grapefruits with rind and pith cut away with aserrated knife and the grapefruits cut into sections
- 4 slices bacon cooked until crisp

Make the dressing: In a blender blend together the grapefruit juce, the pine nuts, the vinegar and salt and pepper to taste until the mixture is smooth, with the motor running add the oil in a stream, and blend the dressing until it is emulsified.

Peel and pit the avocados and cut them into wedges. Divide the spinach among 6 salad plates, arrange the avocado wedges and the grapefruit sections decoratively on top, and drizzle each sald with some of the drssing. Crumble the bacon on top of the salads.
