Chocolate Eclair Torte
This is a recipe that I got from Katie Fishbune...don’t make it too often, but my kids love it!
ingredients
- Pastry
- 1/2 cup butter
- 1 cup water
- 1 cup flour
- 4 eggs
- 1/2 t salt
- Filling
- 1 pt whipping cream
- 2 - 3 3/4 oz pkg French vanilla instant pudding
- 2 cups milk
- 1 t vanilla
- Topping
- 1 1/2 square unsweetened Baker’s chocolate
- 2 T butter
- 3 T milk
- 1/2 t vanilla
- 1 1/2 cup powdered sugar

Heat first 2 ingredients to a rolling boil. Stir in flour over low heat until mixture forms a ball. Remove from heat. Beat in eggs one at a time. Add salt. Spoon onto pizza pan forming a ring like a large donut. leave 1/2 inch space around outside. Bake until dry and gold brown at 400 degrees for 45 to 50 minutes. Cook away from heat and draft. Cut in half horizontally.

Whip cream and refrigerate. Add milk to pudding. Beat until thick. Fold in whipped cream and vanilla.

Melt chocolate and butter. Add 3 T milk and vanilla. Add powdered sugar. Mix well. Drizzle over top. Refrigerate until ready to serve.
