Corn, Shrimp and Sausage Boil
A recipe that I got from Kerry that looks fun to do at the cottage.
ingredients
- 1/2 cup Old Bay seasoning
- 1 T salt
- 1 can light beer
- 8 red potatoes, quartered
- 2 sweet onions, cut into wedges
- 2 lbs andouille sausage cut into 1/4 inch lengths
- 8 ears of fresh corn broken in half
- 4 lbs of large shrimp, peeled and deveined

In an 8 quart stock pot, comine the seasoning, salt, 4 quarts of water and beer and bring mixture to a boil.

Add the potatoes and onions; cook over high heat for 10 minutes. Add the sausage to the pot and continue to cook on high for 5 minutes. Add the corn and continue to boil for 8 minutes. Add the shrimp and cook for 3-4 minutes.

Drain the cooking liquid and rserve a bit for serving. Pour the contents from the pot into several large bowls, shallow pails or simply mound on a paper-covered picnic table. Ladle a spoonful of cooking liquid onto each serving before consuming.
