Chicken Roll-Ups
I made up this dish many years ago and make it for dinner parties, my girlfriends, and Jason and it always seems to be a huge crowd pleaser. It is simple and delicious! I hope you like it as much as we do!
ingredients
- 4 pieces of skinless boneless chicken breast
- 2 eggs (beaten)
- bread crumbs
- bag of fresh spinach
- thinly sliced swiss cheese (or any other cheese you desire)
- low fat plain yogurt
- Dijon mustard
- chives
- 2 cloves garlic
- olive oil
- garlic salt and pepper
- toothpicks

Preparation:

Pre-heat oven to 375 degrees. Rinse and pat dry 4 pieces of chicken breast and cut horizontally making each chicken breast into two thin slices. Crack and lightly beat 2 eggs in a large plate and add garlic salt and pepper. Generously cover a large plate with italian style breadcrumbs. Heat olive oil on a large pan on medium heat.

Mince two cloves of garlic and add to pan. Mix often to prevent garlic from burning. Empty the bag of spinach in the pan. Drizzle more olive oil on top and add a little salt and pepper. Mix often as spinach wilts down.

Drizzle olive oil in a baking sheet. Dip chicken breast in egg mixture on both sides and then in the bread crumbs on both sides. Place flat on baking sheet. Repeat with all chicken breast.

Add slice of swiss cheese on top of each chicken breast follow by the cooked spinach. Roll up the chicken breast rolling from one end to the other other end. Place a toothpick in the middle of the chicken to keep it in place. Drizzle with a little olive oil and place in the oven for approximately 25 minutes. Timing may vary depending on how thin the chicken breast are.

Mix 1 cup yogurt with two to three tablespoons of dijon mustard, garlic salt and pepper. Mince fresh chives and add to the yogurt mixture.

Assemble two chicken roll-ups on a plate with a vegetable and starch side of your choice. Sauteed mushrooms and herb rice pilaf is always a good pairing. Place a spoonful of the yogurt mixture on top of each chicken roll-up. Place a small ramekin filled with the yogurt mixture on the side of the plate for dipping!
