Georgia's Island Crab Rice
ingredients
- 1 1/2 c. uncooked rice
- 2 1/4 c. water
- pinch of salt
- 2 strips of bacon
- 1/4 c. vegetable oil or canola oil
- 1 lb. crab meat
- 1 tbs. garlic powder
- 1 celery stalk, chopped
- 1 medium onion, chopped
- 1 green pepper, chopped
- salt and pepper to taste

Rinse and drain the uncooked rice several times. Combine rice, water and salt. Boil until tender, about 20 minutes.

Meanwhile, fry bacon, crumble. Add oil to the bacon grease and heat. Add the vegetables and cook on medium till onions are clear.

Add crab meat and cook 5 minutes. Add in the bacon, rice and seasonings. Cover and cook 5-10 minutes.

**To Make Crab Casserole** Add a can of Rotel tomatoes, top with shredded chedder and broil for 3 minutes.
