Key Lime Pie ParfaitsElizabeth Jacobs
Jon and I love Key Lime Pie, and this Cooking Light recipe keeps it healthy!
- 1/2 c fresh lime juice
- 1 can sweetened condensed milk (14 oz)
- 1/4 c sugar
- 1 1/2 c whipped light cream
- 1/4 t grated lime rind
- 1 c graham cracker crumbs
- 2 large eggs
- Grated lime rind
Combine first 5 ingredients in large bowl, stirring with whisk until smooth; pour into top of a double boiler. Cook over simmering water until mixture thickens (about 6 minutes) or until a thermometer registers 160, stirring constantly. Remove from heat. Place pan in large ice-filled bowl for 20 min or until room temperature, stirring occasionally.
Spoon 1 T whipped cream into each of 8 8-oz glasses; top each with 1 T crumbs and 3 T lime mixture. Repeat layers once, ending with lime. Top each serving with 1 T whipped cream and sprinkle with lime rind. Serve immediately.
