Cilantro and Roasted Garlic Aioli
This recipe can be made in a vegan or milk-based form. It is fresh and zingy, and highly complimentary to broiled zucchini and asparagus.
ingredients
Vegan- 1/2 bunch cilantro
- 2 heads roasted garlic
- 1/2 teaspoon lemon rind
- 1 Tablespoon (or more) lemon juice
- 1/4 cup (or less) silken tofu
- 1/4 cup plain soy milk (or regular)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

To roast garlic, cut off the tops so the cloves are exposed. Drizzle with olive oil and bake at 400°F for 30-40 minutes or until soft. Once cooled, squeeze from the base to remove the roasted cloves.

Combine all ingredients in food processor and serve chilled.
