Salmon Patties
When I made these for our family I also sliced potatoes paper thin and fried them in the same griddle--which was non-stick. The potatoes were probably what really made the dinner but I never found any under the china cabinet either!
ingredients
- 3 slices bread--s;ightly dried and broken into small pieces.
- 1 can salmon (1#), drained and liquid saved.)
- 1 egg
- 1 small onion cut in 8th’s (or finely diced if not using blender/food processor.)
- 2 Tbsp flour
- 2 Tbsp lemon juice
- 1/4 tsp salt, pepper to taste
- 2 sprigs parsley--optional--I sometimes use dried.
- 1 tsp. Worcestershire sauce
- Butter or margarine for frying

Blender crumb bread, if desired. Put salmon liquid, egg, onion, flour, lemon juice, salt and pepper, parsley and Worcestershire sauce in blender or food processor and grate finely. Or stir them up thoroughly in a bowl--I’m too lazy to clean up the blender unless it’s already out for something. Put salmon and liquid mixture together. Add bread crumbs and mix together. Form patties similiar to hamburgers. They’ll be a little softer. Saute patties in butter or margarine.

The recipe says to serve with ketchup or cocktail sauce. I like to saute some mushrooms to spoon over the top.
