Oatmeal Raisin Cake with Broiled Pecan Icing

ingredients

  • 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp salt
  • 2 cups large flake rolled oats
  • 2/3 cup unsalted butter, room temp.
  • 1/2 cup golden raisins
  • 1 1/4 cup boiling water
  • 2 eggs
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/2 whipping cream
  • 1 cup pecans
  • 1 1/2 cup unsweetened large flake coconut

Cake:

    preheat oven to 325°. Butter and flour a 9 inch spring form pan.

    Sift together the flour, baking soda,cinnamon, allspice and salt. Combine the oats, 2/3 cup butter and raisins. Pour the boiling water over the oats. Allow to cool completely, stirring occasionally. Beat in 1 cup light brown sugar and eggs then the flour mixture. Pour the batter into the prepared pan and bake for 35-40 mins, until a cake tester comes out clean. Place on rack to cool.

Icing:

Combine the 1 cup brown sugar, 1/2 cup butter and whipping cream in a heavy pot. Bring to a boil and cook, stirring occasionally for 3 mins. Remove from the heat and stir in pecans and coconut. Allow to cool slightly then spread it over the top of the cake. Heat the broiler to high. Place the cake about 4 inches below the heat and broil until the icing is brown and bubbly. Place on rack and allow to cool completely before removing from the pan.
