Orzo Pasta Salad
ingredients
- 1 lb orzo pasta
- 1/4 cup olive oil
- 1/4 cup minced sun-dried tomatoes
- 2 cloves garlic, minced
- 1 pt. yellow cherry tomatoes or 2 tomatoes, diced
- 1 small cucumber, peeled and chopped
- 1/3 cup chopped fresh dill, or dried dill to taste
- 2 Tbsp. white wine vinegar
- 1/2 lb feta cheese, crumbled
- Salt and pepper
directions
Cook pasta al dente, drain and transfer to a large bowl. Add remaining ingredients, stir gently. Serve chilled.
