Fiesta Noodle Soup

Makes 6 servings (as 1st course)

ingredients

  • 2 quarts chicken stock
  • 4 Roma tomatoes
  • 4 cloves garlic
  • 1 onion
  • 8 oz pkg No Yolks or Regular egg noodles
  • 1 red bell pepper, diced
  • 1 can (12 oz) corn, drained and rinsed
  • 1/2 tsp ground cumin
  • 1 can (12 oz) black beans, drained and rinsed
  • 1/2 to 1 cup chopped scallions
  • Salt and pepper to taste

directions

Heat chicken stock to a simmer. Meanwhile, puree the tomato, garlic and onion in a blender with just enough stock to make a puree. Add the tomato mixture to the stock and stir to combine. Add the noodles, red pepper, corn and cumin, simmer 6-8 minutes, until noodles are tender. Add beans and scallions. Salt and pepper to taste.

Option: Add chicken to make it a full meal.
