Use ratio of 2 potatoes to 1 small- med. Onion. One egg to 2-4 potatoes. Peel and grate potatoes and onion in food processor.

Add egg, a little matzo meal and salt & pepper to taste. Do not make mixture too thick or too thin by using too many eggs.

Heat vegetable oil in pan. When oil is hot, drop potato mixture by tablespoonfuls into hot oil. Turn when under side is golden and firm.
