Coleslaw with Caraway and Raisins
Midwest Style Cole Slaw
ingredients
- 3/4 c. sour cream
- 2 T. red wine vinegar
- 1 tsp. caraway seeds
- Kosher salt & pepper
- 1 sm. head green cabbage,thinly sliced (about 4 cups)
- 6 scallions, thinly sliced
- 2 carrots, grated
- 1 c. golden raisins

In large bowl, whisk sour cream, vinegar, caraway seeds, 1/2 tsp. salt and 1/4 tsp. pepper.

Add cabbage, scallions, carrots and raisins. Toss well and serve.

Coleslaw was first introduced by early Dutch settlers. This recipe substitutes tart sour cream for usual salty mayo.Caraway seeds add crunch and a hint of licorice.
