Sweet Potato Casserole
This is Mike’s absolute favorite thing...he even requested it before he went off to college each year, even though it was too hot to cook!!!
ingredients
- 3 cups mashed, cooked sweet potatoes
- 1 cup sugar
- 2 eggs, well beaten
- 1/2 cup butter or margarine
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/3 cup milk
- Topping:
- 1/2 cup brown sugar
- 1/4 cup flour
- 3 Tbsp. butter or margarine, melted
- 1/2 cup chopped pecans
directions

Combine cooked sweet potatoes, sugar, butter, eggs, vanilla, spices and milk. Mix well.

Spoon into a casserole dish.

Combine brown sugar, flour, butter and pecans.

Drop in little bits all over the sweet potato mixture.

Bake at 350 degrees for 25 minutes.
