Easy Bellini
If you have ever called me up on a Sunday afternoon, you can probably tell that I have been to brunch. The best part about brunch is being able to drink in the daytime without being called an alcoholic. In New York we had a favorite brunch spot called “Niro”. They have $15 all you can drink brunches, and make Bellinis by the gallon. Bellini is spin on the Mimosa, different taste, and a little stronger. My mom came to visit once, so I took her there. After a Bloody Mary and countless Bellinis, I took her to the Apple store, where I very easily convinced her to buy me an iPhone for an early Christmas gift. You wonder why I like Bellinis so much.
ingredients
- 1 bottle of Prosecco or Brut Champagne
- 1 cup Peach Schnapps
- 1 cup Peach Nectar
directions
Mix and enjoy!
notes
Peach Nector can be found in the hispanhic section of most stores. Goya will have cans of it, or more specialty stores will have over-priced versions. If you can't find either, you can puree a peach with some sugar and water.
