Greek-style Scampi

ingredients
- 1 t. olive oil
- 5 garlic cloves, minced
- 1/2 c chopped fresh parsley, divided
- 2 (28 oz.) cans whole tomatoes, drained and coarsely chopped
- 1 1/4 lbs. large shrimp, peeled & deveined
- 1 c (4 oz.) feta cheese - crumbled
- 2 T. fresh lemon juice
- 1/4 t. ground black pepper
- 4 c. hot cooked spaghetti (about 8 oz.)

Preheat oven to 400 degrees.

Heat oil in a large Dutch oven over medium heat. Add garlic; saute 30 seconds. Add 1/4 c. parsley & tomatoes. Reduce heat and simmer 10 minutes. Add shrimp; cook 5 minutes. Pour mixture into a 13 X 9 inch baking dish; sprinkle with cheese. Bake at 400 for 10 minutes. Sprinkle with 1/4 cup parsley, lemon juice and pepper; serve over pasta.
