Zuppa Toscana
This is very similar to the Olive Garden soup.
ingredients
- 1 lb spicy Italian sausage
- 2 large Russet baking potatoes, cut in half and then into 1/4" slices
- 1 large onion, chopped
- 2 cloves garlic, minced
- 32 oz chicken broth or stock
- 1 qt water
- 1/2 c cooked, chopped bacon
- 2 c kale or Swiss chard, rough chopped
- 1 c heavy cream

Cook sausage (can bake at 300° degrees for approximately 1/2 hour, drain on paper towels, and slice or crumble and cook on stovetop).

Place onions, garlic, potatoes, chicken broth, and water in pot and cook on medium heat until potatoes are done (30-45 minutes). Add sausage and bacon. Add salt and pepper to taste, and simmer another 10 minutes. Turn to low heat and add kale and cream. Heat through and serve.
notes
We like to add extra garlic and red pepper flakes to taste.
