Cauliflower (puree) is a healthy alternative to mashed potatoes.

ingredients

  • 1 Small Cauliflower
  • 1/2 Bunch Parsley
  • 1/3 Bunch Cilantro
  • 3 Sprigs Green of Onions
  • 1 Cup Walnuts
  • 2 Tbsp. Olive Oil
  • 1 Clove Garlic
  • Mayonaise
  • 1 Lemon
  • Salt & Pepper

    Chop cauliflower into bite size pieces.

  • 2

    Dice parsley, cilantro, onions, walnuts and garlic.

  • 3

    Combine all the ingredients together in a bowl.

  • 4

    Add olive oil, lemon juice and mayonaise.

  • 5

    Salt and pepper to taste.
