Mutton Curry
A tasty curry supplied by Max’s grandmother.
ingredients
- 4 1/2 lbs. of mutton cubes
- 1 cup crushed tomatoes skinned
- 1 onion chopped
- 1 cup chopped apples
- 8 diced potatoes
- 3 tablespoons yellow raisins
- 2 tablespoons fruit chutney (I use South African Mrs Ball’s apricot chutney but any brand of fruit chutney will do)
- 2 cloves garlic crushed
- 2 teaspoons sugar
- 4 teaspoons curry powder
- 2 teaspoons turmeric
- 2 teaspoons ground ginger
- 2 teaspoons coriander
- 4 curry leaves bruised to release flavor
- 2 teaspoons salt
- 1 teaspoons pepper

Heat oil in a large pot and brown the mutton stirring.

In a bowl, combine curry powder, turmeric, coriander, ginger, sugar, salt, pepper, raisins, apple and chutney.

Add the above to the meat pot stir well then add bruised curry leaves, garlic, onion and tomatoes.

Add enough water and simmer covered till meat is almost tender about 1 1/4 hours adding water if curry becomes dry.

Add potatoes and cook further until tender again and add water if necessary.

Check for seasoning (might have to thicken slightly with cornstarch and water).

Serve on boiled rice accompanied with sliced bananas, diced pineapple , onions and tomatoes.
