Meringue Bars
ingredients
- 2 eggs
- 1 C 2% milk
- 1/4 C honey
- 4 slices of hearty bread, cut in pieces
- 2 Tbsp raisins or chocolate chips
- 2 eggs whites, at room temp.
- 1/2 C shredded unsweetened coconut, or chopped nuts
- 2 tbsp honey

1. Preheat oven to 350*F. In a large bowl, whisk the eggs, milk and 1/4 C of honey. Stir in the bread pieces and raisins/chocolate chips until well-mixed.

2. Place in a greased 9x9” or 11x7” baking dish. Bake for 25-30min. until firm.

3. In a medium bowl, beat the egg whites with an electric mixer at high speed until stiff peaks form. With a rubber spatula, gently fold in the coconut and 2 Tbsp honey until well mixed.

4. Remove the dish from the oven and spread the surface with the coconut mixture. Bake for another 10min. until the topping is browned. Remove to a rack and let stand to cool. Cut into bars and serve as a snack or dessert.

**Note: Keep in refrigerator until ready to serve.
