Ingredients

  • 2 cups of cooked couscous
  • 6 green onions, chopped
  • 2 medium tomatoes,seeded and cut
  • 1 cup zucchini
  • 1 cup garbanzo beans
  • 1 cup parsley,chopped
  • *******************
  • Dressing:
  • 3/4 cup olive oil
  • 1/2 cup fresh limon juice
  • 2 cloves garlic, minced
  • 2 tsp Dijon mustard
  • 1 tsp ground ginger
  • 1 tsp salt
  • Fresh ground pepper

Saute the onions and zucchini, mix with the remaining vegetables, couscous and the dressing. May be served warm or cold.
