Great Gazpacho

A delicious cold soup that is made really easy by using a food processor.

Ingredients

  • 1 onion
  • 1 cucumber
  • 5 tomatoes
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 zucchini
  • 1/4 bunch basil
  • 1 jalapeno, seeded
  • 1 fennel
  • 1/2 c red wine vinegar
  • 1/4 c olive oil
  • salt and pepper to taste
  • splash of sherry vinegar to taste

  • 1

    Chop veggies, basil, and jalapeno. Put in plastic bowl and marinate in red wine vinegar and olive oil for at least 2 hours.

    Put contents of bowl into a food processor and puree until slightly chunky (will take about four batches to complete).

    Season with salt, pepper, and sherry vinegar.
