Emma's taboulleh (bulgar wheat salad)
This is the perfect accompaniment to any barbequed food but particularly barbequed lamb.
ingredients
- 1 cup bulgar wheat
- juice of 1 lemon
- half cucumber diced
- 12 cherry tomatoes halved or quartered
- 1 bunch of flat leaf parsley chopped
- 2 tablespoons of virgin olive oil
- large pinch of Maldon salt
- Freshly ground black pepper

Place the bulgar wheat and a pinch of salt in a large bowl.

Cover with boiling water - about a quarter of a centimeter above the wheat. Cover with cling film and set aside until all the water is absorbed.

Check to see if the wheat is soft. If not, add another tablespoon of water, cover with clingfilm and place in a microwave, on high, for 30-60 seconds. Remove and allow to rest for 5 minutes still covered with the clingfilm.

Meanwhile prepare the tomatoes. Once halved or quatered, season with the maldon salt and a twist of black pepper. If the tomatoes are not naturally sweet add a pinch of caster sugar.

Once the wheat has cooled, add the tomatoes, cucumber and parsley. Add the lemon juice and olive oil and toss all the ingredients together.

Taste and adjust the seasoning before serving.
