Chocolate Fudge Pie

ingredients

Filling
  • 1 tablespoon cocoa
  • 3 heaping tablespoons dark brown sugar
  • Large box (4 3/4 oz) chocolate fudge pudding mix
  • 2 egg yolks
  • 1 small can evaporated milk
  • 2 cups milk
  • 2 tablespoons butter
  • 1 1/2 teaspoons vanilla
  • baked 9 inch pie shell
Meringue
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 3-4 teaspoons sugar

    Mix cocoa, brown sugar, chocolate pudding mix and egg yolks in saucepan. Stir in both milks and cook until thickened and smooth, stirring constantly. Blend in butter and vanilla. Pour into baked pie shell.

    Beat egg whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Pile meringue onto hot pie filling, being careful to seal the meringue onto the edge of the crust to prevent shrinking and weeping. Bake at 400 until delicately browned (about 8-10 minutes)
