Emma's Chicken, Leek and Avocado Pie
This is a family mid-week favourite and is best served with a fresh, crisp salad and skinny fries.
ingredients
- 1 medium cooked chicken
- 2 leeks finely sliced (tough green parts removed)
- 2 avocados peeled and sliced
- 1 lemon (juiced)
- 2 slices of bread made into breadcrumbs
- 50g of grated cheddar cheese or similar
- 25g butter
- 1 tablespoon of olive oil
- 1 heaped tablespoon of flour
- milk
- 1 teaspoon Dijon mustard
- small glass of white wine

Skin the chicken and take the meat off the bone. Slice into bite-size pieces and set aside.

Heat the olive oil and butter in a frying pan and saute the leeks until soft and translucent.

Add the flour and stir. Cook the flour with the leeks for 2 minutes.

Add the wine and reduce, then add the milk and stir until smooth. Add the mustard and season with salt and pepper.

Fold the chicken into the creamy leek mixture.

Place the sliced avocado in the base of a serving dish and sprinkle with the lemon juice. Fold the chicken mixture on top.

Mix the breadcrumbs and grated cheese together and spread evenly on top of the chicken.

Place in a hot oven for approximately 20 minutes or until crisp and golden.
