Fresh Tomato Bruschetta

ingredients

  • 1 garlic clove
  • 1/4 cup olive oil
  • 3 Roma tomatoes
  • 1 shallot
  • 1 Tbsp. fresh basil leaves
  • 2 Tbsp. Balsamic vinegar
  • 1 (12 oz.) French baguette
  • 4 oz. fresh mozzarella

directions

Mince garlic and put in small mixing bowl. Dice tomatoes, mince shallot, and cut basil leaves into strips. Add to mixing bowl. Drizzle vinegar over the ingredients in the mixing bowl and toss to coat. Slice baguette into 1/2 inch slices. Lay slices on a cookie sheet and brush with olive oil. Slice fresh mozzarella and cut to fit bread slices. Top each piece of bread with mozzarella. Top mozzarella with tomato mixture. Broil until cheese is melted.
